Healthy Breakfast Recipes

Breakfast is the most important meal of the day. However, as we are running late for the office or school, a glass of milk is at most what we manage to slurp as we exit our homes each morning. This need not be so. With easy breakfast recipes conjured within a matter of 5 minutes or less, there is no need to compromise on health anymore.

1. Blackberry Pancakes

Serving: 4
Time: 15 mins

Ingredients:

  • 1egg
  • 3/4 cup Milk
  • 1 cup Flour
  • 1 tsp Baking Powder
  • 2 Tbsp White Sugar
  • 1/2 tsp Vanilla Extract
  • 2 tbsp Butter – melted
  • 1/4 tsp Salt
  • 1/2 cup Blackberries – chopped

Method:

  1. You have to prepare 2 separate mixtures; a wet and dry mixture.
  2. For the dry mixture, take a bowl and add flour, baking powder, salt and sugar to it. Mix it until completely combined.
  3. Take a pan and add butter to it, allowing it to melt over a medium flame.
  4. For the wet mixture, take another bowl and add crack the egg in it. Add the milk, vanilla extract, and melted butter, and whisk together until completely blended.
  5. Pour the wet mixture into the dry mixture bowl. Add the chopped blackberries to it and whisk it thoroughly.
  6. Turn on the stove to a medium heat flame. Take a griddle or skillet and put it to heat.
  7. You have two options; either coat the skillet with melted butter or non-stick spray, to ensure the mixture doesn’t stick to the bottom of the pan.
  8. Add a quarter of the mixture to the skillet. Spread it as wide as you want the pancake to be. Cook until bubbles appear.
  9. Flip the pancake and cook the other side until it changes colour to a beautiful golden-brown.
  10. Place the pancake on a plate, and if you want, you can top it with Maple honey syrup and some fresh blackberries for an aesthetic feel and natural taste.

Your pancake is ready. Repeat the cooking for the next 3 quarters of the mixture, producing 4 pancakes in total, which can serve up to 8.

 

2. Yoghurt and Berry Smoothie

Ingredients:

  • 1 banana
  • 1 cup Vanilla Soy Milk
  • Plain Greek Yoghurt – 5.3 oz.
  • ¾ cup Blueberries
  • ¾ cup Blackberries

Method:

  1. Add the blueberries, blackberries, and banana to a blender.
  2. Add the yoghurt.
  3. Pour the milk on top.
  4. Put it on the pulse for approximately half a minute. Then, stir the mixture with a spoon, and pulse it again for 30 seconds.
  5. Pour it in 2 glasses. The Yoghurt and Berry Smoothie is ready to be served.

It would be best if you pour chilled milk. If not, you can refrigerate the smoothie after pouring into glasses, or drink up as it is.

With these 5-minute recipes, breakfast never seemed healthier, and easier. Simply pour the smoothie in a bottle or grab the blackberry pancakes in your hand as you leave your home.
